    I’m not gonna lie, I had doubts with this creation when I first started it. Everyone has their own way to make the best avocado toast and once you make it a specific way, you don't really want to change it. I get it! My avocado toast recipe was getting to be a pretty basic smashed avocado on bread and I wanted to add some protein with my usual breakfast. Canned chickpeas are an easy way to add in fiber and protein, plus it doesn't change the taste! Add in some white miso paste and you have an amazing flavorful twist to your basic avocado toast! I love miso paste and use it in a lot of my recipes like this Miso Sauce. If I have left over miso sauce, I like to add it into this as well!

    What is miso?

    Miso is used in Japanese cooking and made through a fermentation process either using soybeans and/or a grain. There are many different types of miso...I used white miso paste in most of my recipes. The flavor in white miso paste is a soft umami flavor with a milder and sweeter taste. Because of the fermentation, miso is high in probiotics which is great for your gut health!

    📋 Ingredients

    Sourdough bread, avocado, lemon, miso paste, and chickpeas
    • Avocado
    • Chickpeas
    • White Miso Paste
    • Lemon juice
    • Black pepper 
    • Bread of choice-I use sourdough bread or Dave’s killer bread
    • Garnish options: black sesame seeds, pumpkin seeds, flax seeds, sunflower seeds, cilantro, or sprouts.

    📖 Instructions

    • With a fork, mash the avocados and chickpeas. Add in miso and lemon juice.
    • Toast the bread to your liking. Take a scoop of the avocado mixture and spread evenly on toasted bread.
    • Top with black pepper and garnishes of your choice! Right now, I have been loving black sesame seeds and crushed pumpkin seeds on mine! 

    💭 Top Tips & FAQs

    • For a perfect avocado toast, use a ripe avocado. To see if it's ripe, the avocado should be slightly firm but you should be able to push down on it when you apply pressure. If the avocado is too firm, let it sit out at room temperature for a day or two and it should be perfect! Refrigerate your avocados after they have ripened.
    • What is the best bread for avocado toast? I think any bread works great but my personal favorite is a good sourdough bread! I love a lot of my vegetarian recipes with sourdough bread.
    • You can cover and refrigerate any leftover avocado mixture for 1-2 days. The lemon will help the mixture from turning brown. Just top it onto fresh toast when you're ready!
    • If you have only red miso paste, you're more than welcome to use it and give it a try! I have only tried this recipe with white miso paste. White miso paste has a softer umami flavor with a milder and sweeter taste.

    Ingredients

    • 2-4 slices bread of choice, I used sourdough
    • 1 ripe avocado,
    • ⅓ cup canned chickpeas, drained and rinsed
    • 1 tablespoon white miso paste,
    • 1 tablespoon lemon juice,
    • black pepper, to taste
    • optional garnishes, see notes

    Instructions

    • In a small bowl, add avocado and chickpeas. Mash with a fork.
    • Add in miso and lemon juice.
    • Toast the bread to your liking. Take a scoop of the avocado mixture and spread evenly on toasted bread.
    • Top with black pepper and garnishes of your choice!

    Notes

    • Garnish ideas: black sesame seeds, crushed pumpkin seeds, ground flax seeds, sunflower seeds, cilantro, sriracha, or bean sprouts. Right now, I have been loving black sesame seeds and crushed pumpkin seeds on mine!
    • Storage Suggestions: you can cover and refrigerate any leftover avocado mixture for 1-2 days. The lemon will help the mixture from turning brown. Just top it onto fresh toast when you're ready!
