These mini baklava cups are like the holidays to your taste buds. Flavors of cinnamon, cloves, and orange zest with an oat and almond flour base…can you taste it yet?! So delicious. And it’s not even the holidays yet but who said we can’t have all the flavors of the holidays year round? Especially with all that is going on in this world today, I think we deserve to feel a little bit of the holidays right now. Baklava cups make a great appetizer or mini dessert for your next gathering.
I made these because I was craving some baklava but did not want all the extra sugar and butter (although, SO delicious). I've never made baklava before because, well, I have my mom who makes some AMAZING baklava. I asked her how she makes it, then, created a healthier version of this in cute little cups. I have made this 4 times within 2 weeks because my 3 year old kept requesting to make them with me (hence no pictures of the process and ingredients...except with him 🙂 !).

📖 Step by Step
- First, combine the base ingredients in a small bowl. In a silicone mini muffin pan (I have this one), press about 1 tablespoon of the base as the outer layer. Push a teaspoon or use your thumb to make room for the filling. If you don't have a mini muffin pan, using a regular muffin pan will work great as well. You will just make larger ones and it would make less. This recipe with the mini muffin pan makes about 12 cups.
- Then, crush up the cloves, walnuts, and pistachios. You can make these extremely crumbly or keep it slightly chunky. I like to make the walnuts and pistachios chunkier and grind the cloves into a powder. I have used this Revel grinder for years but you can use any coffee grinder to make it powdery or use clove powder.
- Next, zest some orange and combine it with maple syrup in a separate bowl. Add all but one tablespoon of the maple syrup of this to the nut mixture and combine it well. Scoop it into the base.
- Bake it until your house starts smelling like the holidays (or until the edges of the base start turning golden brown).
- Drizzle some of the leftover syrup on the cups immediately after removing from the oven and enjoy every, last, bite of these cute little cups.

Mini Vegan Baklava Cups
For the base:
- 1 cup oat flour; use gluten-free oats if allergic to gluten
- ½ cup almond flour
- 1 teaspoon cinnamon
- ¼ cup coconut oil
- 2 tablespoons of maple syrup
- Pinch of salt
For the Filling:
- 2 teaspoons cinnamon
- 2 tablespoons pistachios
- ½ cup walnuts
- ½ teaspoon cloves
- ¼ cup maple syrup
- 1 teaspoon orange zest
- Pinch of salt; omit if you're using salted pistachios
- Preheat oven to 350°F.
- Combine all ingredients of the base in a small bowl.
- In a silicone mini muffin pan, scoop about 1 tablespoon of the base. Push a teaspoon or use your thumb to make room for the filling. If you don't have a silicone mini muffin pan, you may use a regular one, just grease with some coconut oil.
- Finely grind the cloves into a powder form. Then, roughly crush the walnuts and pistachios to tiny pieces. Be careful not to grind too much otherwise your mixture will be like a paste versus crumbly. Add the cinnamon and pinch of salt.
- In another small bowl, zest the orange peel and combine with maple syrup. Add about 3 tablespoons of the syrup mixture to the nut mixture and combine. Set the remaining tablespoon of syrup aside for later use.
- Bake for about 15-20 minutes or until biscuit base starts turning a golden brown.
- Remove from oven and drizzle the cups with the remaining maple syrup and orange zest mixture while still hot in the pan.
- Let the cups cool completely before removing from the molds. Enjoy these adorable little baklava cups at room temperature!
- To make oat flour, take rolled oats and grind them finely into a powder.
- You can use any coffee grinder to make the cloves powdery or you can use clove powder. Cardamom is another alternative to clove, I just prefer clove better!
